With autumn just around the corner, pumpkin spice latte is the most common of drinks but if you don’t like the taste of pumpkin or simply tired of it, the carrot is a great replacement. This warm and comforting drink is one of those you must try as you snuggle up to take those hours of warmth during cold autumn days.

ingredients

  • 1 large carrot, boiled
  • 8 walnut or pecan halves
  • 1/2 tsp pumpkin pie spice
  • a mix of cinnamon, nutmeg, cloves, cardamom and ginger
  • 1-2 tbsp maple syrup or honey
  • 120 ml / 1/2 cup almond or coconut milk

preparation

  • mash the cooked carrot using an immersion blender or a food processor
  • add the walnuts
  • blend them all together
  • in a saucepan, heat the milk of your choice
  • add the honey or maple syrup and the spices
  • mix in the carrot mix
  • simmer for 2 minutes
  • turn off the heat
  • ladle the drink into your saving glasses
  • sprinkle some cinnamon on top
