I love mangoes. To me, they are absolutely irresistible and I am not ashamed to admit I DO NOT share my mangoes with anyone. This drink is so simple and refreshing that can whisk you away to Thailand beaches and mesmerising ocean waves.
- one mango, half puree and half chopped in cubes
- 250 ml (1cup) Coconut milk
- 3 tbs honey or maple syrup
In a small saucepan heat the mango puree with the honey or maple syrup for 2 minutes.
Set aside to cool.
Once cooled, add the coconut milk and mix well.
Transfer the chopped mangoes to your serving glass and pour in the mango and milk mix and serve.
