If carrot cake is your favourite and you have a couple of carrots left in your fridge and have no idea what to cook with them this recipe is for you. This is exactly what inspired me to make this smoothie. Forlorn carrots sitting in my fridge. Bananas are often ubiquitous in smoothies, but if you are allergic or simply dislike them dates and carrot puree give just about the adequate thickness to this drink
- 1 large carrot, cooked
- 8 walnut or pecan halves
- 1/2 tsp pumpkin pie spice a mix of cinnamon, nutmeg, cloves, cardamom & ginger
- 4 pitted dates
- 120 ml (1/2) cup almond or coconut milk
Simply blend all ingredients together until smooth. Pour into serving glasses and enjoy.
